Ingredients

For noodles

  • 1 medium spaghetti squash, cut in half and seeds removed

For meatballs

  • 1 lb. ground beef

  • 1 lb. ground pork

  • 1 egg

  • 1 c. shredded zucchini, excess water squeezed out

  • ½ tsp. garlic powder

  • ½ tsp. onion powder

  • 2 tsp. Italian seasoning

  • 2 tbsp. chopped fresh parsley

  • ½ tsp. sea salt

  • ¼ tsp. black pepper

For sauce

  • One 25 oz. jar tomato puree or unsweetened tomato sauce

  • 2 cloves of garlic, crushed

  • 2 tbsp. chopped fresh basil

  • Sea salt and pepper, to taste

Aubrie Edgington’s Creamy Green Chili Chicken

Ingredients

  • ½ c. Greek cream cheese, softened

  • ¼ c. salsa verde

  • One 4 oz. can diced green chilies

  • 2 tsp. cumin

  • 1 tsp. garlic

  • ½ tsp. chili powder

  • 1 ½ tsp. salt

  • 1 can diced tomatoes, drained

  • 2 lbs. chicken tenderloins, chopped

  • 1 medium ear of corn, sliced off the cob

  • 1 Joseph’s lavash bread or CutDaCarb or a single layer of corn tortillas

  • ½ oz. shredded Mexican cheese

Ingredients

  • 16 oz. lean ground turkey

  • 12 oz. mixed corn, carrots, and peas

  • 24 oz. frozen mashed cauliflower (2 packages of Birdseye brand)

  • 1 medium yellow onion, diced

  • 1 c. lite cream of chicken

  • 1 tbsp. minced garlic

  • 2 tsp. olive oil

  • 1 tsp. salt

  • 1 tsp. pepper

  • ½ c. reduced-fat cheddar cheese, shredded

Ingredients

  • 1 tbsp. coconut oil

  • 2 leeks, chopped and washed

  • 1 white onion, diced

  • 1 ½ c. risotto rice

  • 2 c. vegetable stock

  • 1 onion

  • 1 clove of garlic

  • 1 carrot

  • 1 tsp. oil

  • 3 ½ oz. tomato puree

  • 1 oz. dried soya mince
