One of our favorite grocery store items for quick, easy meals is rotisserie chicken. Someone else has already done all the work — it’s crispy, juicy, and ready to be served right away. It also makes for great leftovers! Between Pinterest and loyal home chefs, recipes for leftover rotisserie chicken are all the rage.

Chicken is an excellent source of lean protein and it doesn’t have the fat content found in red meat. Rotisserie chicken takes this nutritious bird to a whole new level by saving you cash (under $10 at the store!) and giving you chicken for days.

After you’ve picked up a rotisserie chicken (or two!) from your favorite grocery store, you can easily split it up into portions that can be used throughout the week. Whether you make a quick chicken salad or a baked casserole, rotisserie chicken can do it all. Here are five recipes to get you started.

1. Chicken Quesadilla

Serves: 1

Ingredients:

  • 1/2 onion

  • 1/2 small red bell pepper

  • 1/2 small yellow bell pepper

  • 1 tbsp. oil (avocado or vegetable)

  • 2 c. shredded rotisserie chicken

  • 2 corn tortillas

  • 2 tbsp. Mexican cheese mix

  • Salt and pepper, to taste

Directions:

  1. Slice onions and peppers.

  2. Add oil to a frying pan and add the vegetables. Season with salt and pepper if you'd like.

  3. Stir until the onion and peppers are soft. Toss in the leftover rotisserie chicken.

  4. Meanwhile, put a tortilla on a plate and sprinkle shredded Mexican cheese on top.

  5. Add the warmed chicken and cooked veggies on the tortilla. Top with another tortilla. Place the tortilla back in the pan to melt the cheese and crisp the tortilla. Flip after a few minutes.

2. Spinach, Artichoke, and Chicken Lasagna

Serves: 8

Ingredients:

  • 1 lb. lasagna noodles

  • 3 tbsp. butter

  • 2 cloves garlic, minced

  • 3 tbsp. all-purpose flour

  • 3 c. milk

  • Kosher salt

  • Freshly ground black pepper

  • 1 c. freshly grated Parmesan

  • 2 c. shredded rotisserie chicken

  • 1/2 lb. frozen chopped spinach

  • 1 (15-oz.) can artichoke hearts

  • 2 (15-oz.) containers part-skim ricotta

  • 4 c. shredded mozzarella

3. Buffalo Chicken Wrap

Serves: 4

Ingredients:

  • 2 c. shredded rotisserie chicken

  • 1/2 cup buffalo sauce

  • 4, 10-inch flour tortilla wraps

  • 4 tbsp. blue cheese sauce

  • 1 large carrot, peeled & grated

  • 1/4 of whole iceberg lettuce, finely shredded

  • 1/4 of whole red cabbage, finely shredded

4. Chicken Nachos

Serves: 4

Ingredients:

  • 2 c.shredded chicken

  • 3/4 c. barbecue sauce

  • 1 bag of tortilla chips

  • 3 c. shredded cheddar cheese

  • 1 c. crumbled Cotija cheese

  • 1 c. pickled jalapeños

  • 1/2 small red onion

  • 1 avocado

5. Rotisserie Chicken Salad

Serves: 1

Ingredients

  • 2 c. shredded rotisserie chicken

  • 1/2 cup low-fat mayo

  • 1/2 tsp. salt

  • 1/2 tsp. black pepper

(Optional)

  • 1 tbsp. red onions

  • 2 tbsp. celery

  • 1 tsp. chives

  • 1 tbsp. walnuts

  • 1 tbsp. red grapes

  • 1 tsp. raisins

Directions:

  1. Place chicken in a bowl.

  2. Add mayonnaise, salt, black pepper and mix well.

  3. Depending on how you like your chicken salad, you could add chopped red onions for a bite, celery chunks for crunch, or chives or a green onion. Some people like walnuts and red grape slices or raisins.

  4. Mix all of the ingredients well in the bowl and chill for two hours in the fridge. Serve on a roll, whole wheat bread, wrap, or on a salad.
